Calcium acetate (E 263) is a chemical compound with the chemical formula Ca(CH3COO)2. It is a calcium salt of acetic acid.

Calcium acetate is used as an acid-regulating, preservative and firming food additive. It is approved in the EU as a food additive with the number E 263 without a maximum quantity restriction (quantum satis) for all foods approved for additives.
Calcium acetate is often used as an extraction agent for soil samples. It can also be used as a fuel paste in combination with denatured alcohol.

After a few seconds, all the acetate has crystallized out, but releases the heat of crystallization that has developed over a longer period of time. The duration mainly depends on the size of the heating pad (ratio of volume to surface area) and on the ambient temperature.
