Sodium alginate

Sodium alginate is the sodium salt of alginic acid. It is a hydrophilic polymer made from brown algae. It is available in powder form and becomes a gel after mixing with the correct amount of water. Sodium alginate is mainly used as a thickener and is authorized under number E401.
