What is Ammonium Bicarbonate?
Ammonium bicarbonate, with the formula NH4HCO3, is the acid salt derived from carbonic acid, with the formula H2CO3, by replacing an ammonium cation with a hydrogen cation, with the formula NH4 +.
The name ammonium bicarbonate or ammonium is still widespread in trade and industry, but is not recommended by the IUPAC: the old accepted name ammonium hydrogen carbonate, or better yet, the systematic name ammonium hydrogen trioxide carbonate, is preferred.
Ammonium bicarbonate is used in the food industry (bakery and confectionery industry) as a raising agent with the code E503 (ii). So it is a chemical yeast. It is not used in large quantities, as it does not allow the gas to be released from ammonia, trapping it and leaving a bad taste.
It is also used to obtain ammonium salts, dyes, compounds for fire extinguishers, etc. It is also used as an expansion agent for rubber. The substance marketed under the name ammonium carbonate is usually a mixture of ammonium bicarbonate (NH4) HCO3 and ammonium carbamate (NH2COONH4)
