What is Potassium Acetate?

Potassium acetate is an authorized food additive in Europe (number E261). It is classified as a food preservative and a pH corrector.
The combustion of potassium acetate gives a flame of blue color.
What is Potassium Acetate used for?
Potassium acetate can be used to extract water from the azeotropic ethanol-water mixture. Salt lowers the vapor pressure of the solvent in which it is most soluble. The solvents are then separated by distillation.
Potassium acetate in aqueous solution (pH 8.2) can be used for fire extinguishing, mainly in kitchens due to oils and fats retaining heat. It forms a soapy foam on contact with a hot surface, which smothers the fire. It is easy to clean and non-toxic.
Potassium acetate is also used as a "de-icer" to combat ice, for example on the runways of Montréal-Trudeau Airport. It is used as a replacement for salt (NaCl), which is more corrosive, and urea, which is more toxic.
