What is Iron(II) gluconate used for?
It is used in the food industry as a food additive from the group of stabilizers for olive blackening. Blackened olives can be recognized by the fact that the olive pit is still greenish and the flesh of the olive is slightly black. The addition of first sodium hydroxide and later iron gluconate leads to an oxidation process in food and a black discoloration, which is finally stabilized with ferrous gluconate. It is approved in the EU as a food additive with the designation E 579, exclusively for olives blackened by oxidation.
Iron gluconate is used in pharmacy, for example, as an acid regulator or to increase the iron content. The substance is part of medicines and dietary supplements to increase iron levels in the blood. The active ingredient is relatively harmless; So far, no harmful side effects of ferrous gluconate have been identified. Severe reactions can only occur with intravenous administration of high doses. Iron gluconate can cause irreversible tooth discoloration.
Ferrous gluconate also appears to be used in the oil industry as a corrosion inhibitor.
